
The six ingredient delicious meal!
Ingrediants:
One eggplant
Olive Oil
Black Pepper
Crushed red pepper
Plain greek yogurt
Dill
1.) Put your oven on convection roast for 400 degrees
2.) Cut your eggplant into sections, as big or small as you like it
3.) Toss your eggplant in olive oil, black pepper, and crushed red pepper. Get funky with it.
4.) Put on a cookie sheet, evenly spread out
5.) Put in the oven for 10-15 minutes or until crispy
MEANWHILE
Make your greek yogurt dip. Get ready. Its really a doozy.
1.) Get greek yogurt up outta yo fridge
2.) Put as much as you would like in a bowl
3.) Put some crushed red pepper and dill up in that greek yogurt
4.) Stir that shit
Once your eggplant is donzo put your lovely greek yogurt dip on your eggplant and youre set!
So delicious, healthy and filling!

Dinner- Moroccan Pumpkin with Chickpea soup, 1 slice of Wheatmeal bread with avocado
It isn’t always the most appealing to the eye, but lentil soup is amazing. I brought a container of it to school for lunch today! There are 3 different types of lentils: brown, green, and red ones, though their stats are almost identical. This soup is reaaally low in fat, pretty high in protein, and CRAZY high in fiber. Seriously. You get about 65% of your daily fiber from one freaking cup! Something else notable is that it contains a lot of iron, which is important because a lot of vegetarians struggle with iron deficiency. So don’t be scared by the looks of this soup, it’s not nearly as funky as it looks! Definitely worth checking out.

I can’t believe I didn’t used to eat breakfast. Now my mood is brighter in the morning and I have so much more energy throughout the day. One of my favorite ways to start the day is with a warm bowl of oatmeal. Today I added in some vanilla, cinnamon, and brown sugar with some chopped bananas. I have a little trick I use to get the most out of my oats.
Instead of making the recommended amount, I double the liquid (half milk and half water) as well as the cooking time. You’ll end up with a ginormous bowl of oatmeal! The key here is to allow the oatmeal enough to sit and thicken up, otherwise the excess liquid can make it a bit soupy. Enjoy!
