Raw Kale Salad with Avocado Dressing Recipe: Kale is the ultimate superfood. Just a cup of this bad boy has 36 calories, 5 grams of fiber, and 15% of the daily requirement of calcium and vitamin B6, 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K. The list of kale’s health benefits goes on, but I’m not here to bore you with these insane stats. I’m not gonna lie..I didn’t used to like kale at all. The only way I would eat it was if it was sauteed with some spinach and olive oil (which is really good!) or pureed in a veggie smoothie. Getting my hands on this recipe was like winning the jackpot. It’s easy, quick, super refreshing, slightly creamy, and crazy healthy! 

You will need: raw kale, a pepper (red, yellow, or orange), a red onion, an avocado, lemon juice, and some salt and pepper. The amount to use is totally up to you, so feel free to tweak the recipe to how you would like it (especially the dressing to salad ratio.)

1. Chop up kale into a good salad size.

2. Chop your pepper into smaller, bite-sized pieces.

3. Coarsely chop some of your red onion.

For the dressing:

1. Mash about 1/2 of an avocado (obviously use more if your salad is larger.)

2. Squeeze in lemon juice to taste.

3. Add salt and pepper to taste.

Then toss in your avocado dressing with the kale, pepper, and onion really well and ENJOY!

Once you have kale this way you will realize how AWESOME this super veggie really is. So next time you hit the super market, make sure to pick up some kale and try this recipe out, you’ll be glad you did.
